So first an apology, the easter weekend got the better of me !! We were busy with work and if I am honest I didn’t know what day it was and as such we didn’t send out our blog, so back to it !!

What’s been going on 

So last Friday was our last day running the food solutions for a global corporate client at a Covid-19 recovery centre, check out our Instagram post to see what we got up to

Last week we employed our first head chef Michael Piper, check out our meet the team segment on Michael here 

We also returned to New Milton Rugby Club last week with the return to training, we have been the caterers at New Milton Rugby Club for the past 2 seasons providing a full catering solution including breakfast, freshly made barista coffee, street food and a selection of cakes 

What’s coming up 

In case you missed it we have announced the dates for our return for our Signature Supper Club which are filling up really quickly, if you would like more information please drop us an email or message on social media 

The evening starts at 7pm with canapés on arrival before a 3 course meal and petit fours, the menus change for each event and we will be sharing them with you very soon

We are looking forward to getting back out and about with our food truck over the coming months and have bookings in place for parties, weddings as well as some events

Matt’s Recipe of the Week 

This weeks recipe of the week is for the prefect sour dough pizza dough. Its quick and easy, its tasty delicious and will take your pizza game to a new level !!

This recipe makes 7 balls but they are prefect to freeze down once rolled 

Strong White Bread Flour x 1000g

Fresh Yeast x 1g

Salt x 40g

Sugar x 40g

Cold water x 600ml

Add the water to your mixing bowl and dissolve the yeast into it

Slowly add the flour to the bowl with the salt and sugar 

Mix together and then kneed either my hand or machine for 5-10 minutes 

Place in a bowl and allow to relax for 5 minutes before needing for another 2 minutes 

Return to the bowl, cover and leave in warm place for up 48 hours. The longer you leave it the greater the fermentation and the more sourness to your dough 

When you happy with the fermentation of the dough knock it down and kneed the dough for 2 minutes 

Cut the dough into 240g balls and roll them

Place the balls on a tray dusted with semolina or flour with sauce to grow and leave for 2 hours to prove 

Roll out and your ready to top and cook
