The sun is shining and it’s been busy at HQ


Wow where has the last week gone !!

We have been really busy at SO41 HQ this week, we have been sorting, planning and building for the future.

With us finishing working for a global banking client a couple of weeks after 13 months providing a complete catering solution we have quite a bit of equipment that needed to be cleaned and sorted and for Lisa to readjust from the 5.30am starts.

We have been creating and building out our new offer for Signature and StrEat which we will be promoting very soon as well as writing and imaging the menu for the relaunch of our Signature Supper Clubs which has filled us with excitement and left us feeling hungry !!

We were busy again providing our StrEat takeaway delivery Friday and Saturday evening, busy producing our Signature Ready Meals and busy providing the catering at New Milton Rugby Club on Sunday morning.

What’s Coming Up

As mentioned above we have launched the dates for our return to our Signature Supper Club which are feeling up fast.

The evening starts with canapés on arrival before a 3 course menu (see below) based on classical flavours give the SO41 treatment, we have a licensed bar and are held at our unit in New Milton.

These events are a relaxed and social in line with the current covid policies and we can not wait to see you guys !!

Our SO41 MarketPlace is our online store where you can get our Signature and StrEat products. It works like any online shop, we offer free local delivery between Tuesday and Saturday and if you order before 4pm we can get it to you the next day

Matt’s Recipe of The Week

To celebrate St George’s Day last week, our recipe of the week is for a English classic and a staple of Sunday lunch ‘The Yorkshire Pudding’

Ingredients

Plain Flour x 200g

Free Range Eggs x 200ml

Whole Milk x200ml

Salt x 10g

Cracked Black Pepper x 5g

Its best to make your Yorkshire pudding mix the day before require and allow the mix to rest in the fridge overnight

The key to Yorkshire pudding is to have equal amounts of each ingredients. You can use a measuring jug, a coffee cup or scale but as long as its all equal

Add the eggs to a bowl and whisk well

Add the milk and whisk

Add the flour and the salt and whisk to form a smooth batter

Cover and leave in the fridge overnight

On the day of use pre heat you even to 200’c and bring the mix out of the fridge 30 minutes before use

Using a ladle slowly and gentle get some more air into the mix as it may have separated overnight

Getting your tray add some vegetable oil into each well before placing in the oven for 20 to 30 minutes for the oil to get hot

Carefully remove the tray, be careful the oil is going to be hot but quickly as you need that hot oil ladle the batter into the tray and place back in the oven

Cook for 20-25 minutes, you need the pudding to be golden brown and risen. Cooking time will depend on your oven and might take a couple of goes to get the prefect time. If you remove them from the oven they will sink

Once cooked remove from the oven and remove the Yorkshire puddings from the tray and place on a cooling rack

This recipe might take some trail and error with cooking times and temperature so don’t get dishearten if it doesn’t work first time but once you have it right you will take your roast dinner game to the next level
